I do think cod can have a tendency to be a little bit flavourless, so it really needs some punchy ingredients to make it sing.The amazing flavour combo of garlic, coriander, lime and chilli does just that....

A really quick and simple noodle salad for you today. I was looking for something healthy, crunchy and just a little bit filling to serve alongside some Thai fishcakes, and this salad turned out to the be the perfect answer. The first time I heard of it, it was for a copycat version of Olive Garden’s Alfredo....

I LOVE how pretty these ruffle bars are! Look at that vibrant pink colour! Totally artificial. You ain’t getting this colour from pureed raspberries. No, these ruffle bars get that pinkish loveliness from raspberry jelly crystals. I got the inspiration for these from Baking Bar - although I changed things up a little by using more coconut, replacing evaporated milk with condensed milk (for that coconut ice flavour/texture) and adding a little milk chocolate to the dark chocolate simply because I needed to use up some of the leftover Easter egg chocolate we’ve still got in the house!...

Sometimes salad isn’t about the salad. It’s about the dressing. Let’s be honest. If you say ‘what are we having for lunch?’ and someone says ‘salad’, not many people are excited at the prospect. Usually a bowl of lettuce, tomato and cucumber is conjured up in the mind - which, if you’re a maker of said salad (Mr/Mrs large pub or cafe chain owner), let it be known that no-one likes that salad....

This vegan cake came about simply because I didn’t have any eggs in. Since I had soya milk in the fridge, I thought I might as well go all in and make a vegan version! And let me tell you - the process was not as easy as I expected. It took a little more testing than usual to get it right. I always find it’s the cakes that take more testing....

My final recipe for Vegetarian Week! I couldn’t finish the week without coming up with some kind of Asian-inspired recipe - you know they’re my favourite! As with the previous two (Vegetarian Loaded Mexican Tortilla Pan and One Pot Garlic and Herb Spaghetti) we’re again going with a one pot vegetarian meal - well actually this is more like a one-tray meal. Piles of mushrooms, plus colourful veggies such as peppers, courgette, asparagus and broccoli are all baked together, then drizzled with a spicy garlic/soy/chilli/honey sauce and finished with toasted cashews....

I usually make this for our family of four with the intension of saving a couple of portions for another meal. However, it’s just so tasty that I generally find that the dish has been sneakily picked clean by anyone who happens to wander into the kitchen before I manage to get it in the fridge. I’ve successfully made a gluten free version of this too. This involves replacing the lasagne sheets with gluten free lasagne sheets, and also prepping your béchamel slightly differently....

This is so simple that I’m not sure I can even call it a recipe. It is delicious though, so I had to share it! I love anything with Amaretto in. That sweet, almond scent - reminds me of bakewell tarts and marzipan - drool! I could happily got for a day out to an Amaretto factory and just sit on a bench, inhaling it all day. I wonder if if it’s possible to get drunk inhaling Amaretto scent?...

Apple pie and custard or Apple pie and ice cream, or with simple good old double cream (heavy cream) or maybe you like it on its own. My family and I are divided, I love it with custard, Chris loves it with ice cream and the kids love it with both! and why not? This is a beautiful classic dessert and just the best thing to serve after a big Sunday roast, you will love the oohs and aahs of delight when you bring this to the table, it just puts a smile on everyone’s face, and a little smug one for you too....
