Vegetarian Loaded Mexican Tortilla Pan

This recipe was commissioned by the Vegetarian Society as part of #nationalvegetarianweek It’s vegetarian week, so we’re upping our target of one-day-a-week of meat-free eating! This week I’ll be posting THREE scrumptious vegetarian recipes, that have passed the ‘carnivore-of-a-husband taste test’. We’re starting off with this veggie tortilla pan! Packed with tomatoes, courgette, peppers, carrot and beans, we’re getting some serious five-a-day brownie points. All made in one pan, stacked up with tortillas, topped with melty, bubbling cheese and finished off with a big pile of extra toppings, like red onion, avocado, chillies and fresh coriander....

10 Delicious Soups To Warm You Up This Autumn

Tell me, are you the sort of person who: I’m definitely in the first category. Stemming from childhood, my mum always made sure there was plenty of gravy on the table. Going round to someone’s house for dinner, or out for a meal and being faced with a ’little bit of jus’ that we’ve all got to share makes me seriously uncomfortable. That teeny tiny gravy boat is staring at me with just a little dribble left in the bottom....

Beef Goulash

I thought it was time to pull this one out of the archives again as it’s so flippin good. Tender chunks of beef in a thick tomato and pepper sauce - spiced with beautiful smoky paprika (don’t go easy on the paprika now - this stew can take plenty). I’ll happily admit - this isn’t a 100% authentic Hungarian goulash. Traditional goulash, I’m told, is more of a soup that doesn’t rely on flour for thickening....

Charred Grapefruit And Ginger Fizz With Chilli Syrup Mocktail

Judging by the fishbowl-sized gin and tonic I was cradling at the weekend, I think it’s fair to say I’m not. I’m not much of a drinker generally – one or two at the weekend (unless it’s girl’s night, then it’s a different story) is enough for me. Chocolate is my biggest vice. Maybe I should have given that up for January (yeah right!). I do know what it’s like when everyone else is drinking and you’re not though....

Chinese Crispy Chicken With Honey Garlic Sauce

If you look at my Top Posts & Pages widget on the sidebar, I’m willing to bet there are at least two Asian-inspired recipes on there. You guys seems to love the Chinese stir fry’s, sticky-spicy combos like my Crispy Sesame Chicken and curries like my Beef Massaman, so I’m hoping you’re going to love this one too! Not gonna lie - it takes a little bit of effort, as you need to deep-fry the crispy chicken tenders first - if you want really crispy, juicy chicken strips....

Creamy Garlic Mushroom Stuffed Bread Rolls

Waaaay better than a boring old sandwich, check out these melty, hot stuffed petit pains. Bread is a wonderful thing – be it sweet toasties, beautiful brioche or ale bread rolls (ok, maybe sandwiches aren’t that boring). You just can’t beat bread for a quick lunch. I know bread is the king of carbiness (made up word?), but unlike a normal sandwich, you aren’t eating the whole roll here. A good chunk of the bread is scooped out and replaced with the lusciously good filling....

Easy Chicken Gyros

Usually authentic gyros is made from skewering heavily seasoned meat (often chicken or lamb, sometimes pork) and cooking it slowly on a rotisserie (gyro actually translates to rotation). This is my ultra easy version - to get that juicy, crispy, spiced meat in super quick time....

Orange Drizzle Cake With Candied Orange Peel

I’m trying to cut back on the carbs and OMG I NEED this cake right now. Prawns, cheese, eggs, bacon, almond milk lattes - they sound so good at the time you decide to ‘be good’ but after literally half a day, I want cake, or a crumpet or just a bloomin banana! The whole low carb, high fat thing is one I do when I need a quick fix (way better than the 3 day diet - have you heard of that one?...

Pb J Mug Cake A Super Quick Dessert For One

Lewis has finally gone off peanut butter! After a couple of years of eating it pretty much every day, he’s finally decided he no longer wants it for breakfast. And I have FOUR jars of peanut butter in the cupboard! Fortunately, like me, he’ll still eat it in cakes and curries (like this Snickers cheesecake and this Thai-style peanut pork). It’s just the sandwich/toast topping that’s now banned. So I’m looking into new ways to use up our stash, and this Peanut Butter and Jelly (or peanut butter and jam in my case, since I’m English) is the clear winner so far....

Rainbow Smoothies

I’m a relatively new smoothie convert. I had a weird combination at a juice bar a few weeks ago – spinach, cucumber, mint, celery and apple. I half expected it to taste like chilled-infusion-of-garden-waste-bin, but it was actually really nice and refreshing! So much so, I ordered myself a new smoothie blender that very evening. I’m a terrible sucker for advertising – through general daily life or via TV. Chris has to grab the remote to save me from myself if I flick across a shopping channel....

Slow Cooker Barbacoa Beef

Just a little bit spicy and a little bit tangy too. I can put far too many of these tacos away in one sitting!Of course this isn’t a traditional recipe. Traditional barbacoa - which is believed to have originated in Barbados, but is more commonly known now as Mexican cuisine - uses meat (lamb or goat usually), that is slow roasted for several hours in a pit that is topped with maguey (agave) leaves....

Strawberry Shortbread Ice Cream

I love it when something easy-to-make tastes out of this world. Making multi-step cakes and desserts can be fun, but tucking into a bowl of something that tastes this good - after only 10 minutes of prep and a spell in the freezer - well, it almost feels like you’ve been let into a secret. The best secret! and now that the kid are off school, I need some quick recipes!...

Tear And Share Sausage Rolls

These 3-ingredients tear and share sausage rolls are the one thing that appear on my party, buffet or picnic table every single time! They’re quick and simple to make, and they taste amazing warm or cold. I’m pretty sure sausage rolls aren’t a big thing in America, but you can find them in every supermarket and bakery in the UK. I’m not usually a fan of the supermarket ones – the greyish looking interior puts me off....

White Chocolate Cherry Cups

I saw a video on Facebook recently for homemade peanut butter jelly cups and it was such a cool idea I had to give it a go!! I decided to go for white chocolate rather than milk chocolate at the request of one of my lovely facebook followers. I was going to fill with salted caramel, but realised that was just a little too sweet. In the end I went with the biscuit and cherry pie filling - a little bit of crunch, and a little bit of cherry tartness - delish!...

Easy Strawberry And Rhubarb Sorbet

Look at that colour! You’d think I’d added half a bottle of food colouring and a mountain of sugar - but this whole tin of sorbet only contains 4 tablespoons of honey for sweetness. The honey is added to counteract the tartness of the rhubarb. The rest of the sweetness comes from beautifully ripe, sweet strawberries. I do kind of like my sorbet to have a bit of a zing to it, so it also includes a squeeze of fresh lime juice....

Gluten Free Chocolate Peanut Banana Cupcakes

I was about to start this post off telling you that I was sitting on the sofa at my folks house listening to my dad playing on his guitar and singing a song with his lovely voice. Living over 50 miles away, I don’t get to hear his chilled-out tunes anywhere near as much as I used to when I lived here. Unfortunately the tranquility lasted all of 3.5 minutes before my 5-year-old took over the guitar - and now I’m listening to a right old racket....
