Thai Green Chicken Curry Recipe

Our 9-year-old is a big fan of Thai green curry. When he was younger, he used to call it ’that browny coloured curry’. Mmmm appetizing! It’s true though - most Thai green curry pastes are a kind of sludgy brown colour. We used to buy a green (brown) curry paste that was relatively mild. I think it was the one made by Thai Taste. But in the last couple of years I’ve noticed it’s become spicier....

Thai Prawns With Cauliflower Rice 246 Calories

I really wanted to update this recipe, as it’s been on the blog so long! The pictures were awful, and it just didn’t seem right considering I make this dish fairly often. So when I started re-shooting this, Chris and I realised it would be a perfect recipe to start off our 20 Minute Tuesdays video series!! A new series showing you how you can make tasty meals in 20 minutes or less....

Baked Potato Croquettes With Cheese

Some simple but totally addictive cheesy snacks for you today! Crispy bites of mashed potato with oozy, melted cheddar cheese in the middle, covered in crunchy breadcrumbs. I think I could eat 50 of them… I like to bake these croquettes because it means you can cook more of them at once, and also prevents that splattery mess you can get with frying foods. You can still get a lovely, golden crunch without frying breaded food like this - the secret is to add a little oil into the breadcrumbs....

Bottom Of The Chocolate Box Brownies

It hurts my heart to see those abandoned chocolates at the bottom of the chocolate box. Forgotten, unloved, and likely to remain there for at least another month when: a) They’ll be eaten all in one go by the person who’s been trying to diet all month (that would be me) Or b) They’ll be chucked away by the ruthless person who is sick of the sight of them cluttering up the sideboard Well I’m here to give you a third option people!...

Crispy Baked Sweet Potato Fries

Sweet potato fries are totally different from regular fries, for a start they are baked not fried so a lot more nutritious and full of Vitamin A. They have loads of flavour but sometimes end up chewy, rather than crispy… but not these ones! These are crispy and perfect for dipping, extremely moreish and totally delicious. The kids will eat these by the handful, so I always make sure to make plenty, with a good variety of dips....

Easy Homemade Garlic Bread Recipe

Crispy edges, soft, tender bread in the middle and slathered in salty garlic butter. Really good homemade garlic bread like this is just so moreish! You can make the garlic butter in advance for this and store it in the fridge so you can whip up some garlic bread in ultra-quick time for a side-dish treat to go with pasta or for dipping into soup. It’s also a great way to use up bread that’s going a little stale....

Festive Lentil And Mushroom Bowl With Star Potatoes

This recipe is made in collaboration with the Vegetarian Society. Get this guys, not only am I making a meat-free Christmas recipe - this one is vegan too! I think this might be the first vegan recipe I’ve made for the blog, and I’m so happy with how it turned out! As you may know, we’re trying to incorporate at least one meat-free day a week into our diet, but generally the meat option is replaced with eggs, cheese or a creamy sauce....

Fruit Soda Bread

Warm fruity bread for breakfast without having to get up at 5am to get it ready for breakfast! This bread requires no yeast, no kneading and no proving time. You can have it out of the oven and cooling in an hour. I’ve always loved fruit toast for breakfast, and usually buy it in for weekends if I’m not making pancakes or sweet grilled sandwiches. I’ve discovered recently just how easy it is to make though....

Ok, now I can have my little mid-week moan…. No longer motivated after the weekend, and still too far away from the next weekend to be excited about all the naughty foods I’m going to to eat, I’m starting to get a little hangry....

Snow Cones With Homemade Fruit Syrup

The blazing sunshine means that even I’ve been wearing strappy tops and sandals! The kids have been begging for ice lollies every 15 minutes (Chris too), so to save my whole freezer being taken over by shop-bought popsicles, I’ve been making snow cones!! I first made them a couple of years ago for another site, and at the time, I accidentally bought about a thousand snow cone cups. (By the way you can buy the snow cone cups here) <– affiliate link We start off making the fruit syrup, which I’ve made from cartons of fruit juice....

Tropical Chocolate Bars

This is not a Bounty. It kind of looks a little like a Bounty, and it tastes a bit like a Bounty, but these Tropical Chocolate bars are my lightened-up version. Before you raise your eyebrows and point at that thick layer of chocolate on the outside, know this: I was never going to do away with the chocolate. Replacing the chocolate with something else is the point when ’lightening-up’ just turns into ‘Mmm that was nice, but now I need a real chocolate bar’....

Vietnamese Steak Salad

Vietnamese Steak Salad for lunch anyone? This beautiful, crunchy salad with noodles, griddled steak and a spicy-zesty dressing is delicious and guilt-free. Something lighter was definitely called for after indulging in those chocolate brownie parfaits and lots of fruity tea bread (coming up next week!). I love love love my food (can you tell?), but I always struggle to find a balance. I know I’ll never give up bread, chocolate (I’m eating a milky way whilst writing this), or dairy....

Asian Salmon With Chilli Lime Noodles

Jump to:📋 What do we need? 🔪 How to make this Asian Salmon Noodles recipe 🍲 More fantastic fish recipes Asian Salmon with Chilli Lime Noodles 💬 Reviews This is actually a really old recipe on the blog, but I’ve updated it for 2021 with new photos, video and a few tweaks to the noodles to make them even more tasty. 📋 What do we need? For the Salmon I like to use tail-end salmon pieces for this (rather than the regular narrow pieces) - as it gives you more room to spread the glaze on, and I think it looks better on a bed of noodles....

Cheese And Tomato Garlic Pizza Bread Some News

I don’t know if you know this, but I’m not a huge pizza lover. I adore pasta, so I’d never turn down going to an Italian restaurant, but I’ll always choose pasta (or meat/fish) over pizza. I think it’s the sheer amount of tomato paste, the often slightly soggy base, and the fact that every mouthful tastes the same, that generally makes me ignore that side of the menu. The only exception was when we were in Italy last year....

Cheese Stuffed Bread With Spinach And Sun Dried Tomato

Why are certain cheeses stretchy? I’ve no idea, but a quick google search reveals that cheeses with a lower acidity and higher moisture content are more likely to be stretchy ones. I’ve always gone straight in with the mozzarella when looking for a stretchy cheese. However, I find mozzarella - especially when cooked - to be a bit flavourless. So I tend to mix it with strong cheddar. That’s exactly what i’ve done with these cheese stuffed breads....

Chicken Chorizo And Prawn Jambalaya

You should be able to feed 5 or 6 people out of this - or 4 in our case with leftovers for THE BEST lunch. I love a bit of one pot cooking (I’ve got a whole section of the blog devoted to them in my One Pot Section). Such satisfaction in throwing things in a pan at different stages and ending up with a lovely dinner. It’s not one of those pretend one-pot cooking recipes, where you have to cook a few bits, then scrape into a bowl and cook the next bit in the same pan - thereby needlessly dirtying a bowl....

Chicken Madras

Do you like your curry hot? I like a hot curry every now and then, but not so hot you can’t taste the flavours and you’re sweating at the table! This curry can be made as hot as you like. Chicken Noodle Soup With Turmeric

We all know I’ve got a big appetite. A regular bowl of soup isn’t going to do it for me. Rather than fill up on bread or sandwiches to go with it though, I like to make my soups hearty and filling! If you take a look, you’ll see that most of my soup recipes have lots of toppings or are ultra loaded with chunky, filling ingredients. No-one likes a hangry Nicky, hunting around the house for a snack 10 minutes after lunch, so this is definitely the better option....

Chocolate Coconut Granola

Sometimes it’s so pleasant to find yourself sat in front of a lovely breakfast like this that you have to say hi. Or maybe that’s just me. I’m starting to get quite a few granola recipes under my belt, considering I only really discovered granola less than a year ago. I started off with a sugar free version - for those days when i’m feeling virtuous. I soon upped the naughtiness just a little with my regular macaroon and fresh raspberry macaroon versions....

Chocolate Orange No Bake Cheesecake

Oh man, you wouldn’t believe how quickly this cheesecake was demolished by out little family of four. It’s quite a rich dessert, so I think you could easily get 12 servings out of it. I made it on a Friday and it was gone by Saturday night. A slice after tea, a slice with a cup of tea, a slice in front of the TV later……. It’s no wonder I seem to spend two weeks of any month putting on five pounds, and the other two weeks losing them again!...
