Savoury Dinner Pancakes With Chilli Butter

I love an omelette for a quick dinner, but unfortunately Chris and the kids won’t eat them, so this is my way of making everyone happy with just an extra few minutes of prep needed to whip up some pancake batter. I wasn’t sure how well chorizo would go with syrup, but OMG yes!! Add in the bacon, a little cheese and that salty chilli butter too? This is a seriously good recipe for pancakes with a twist....

Simple Strawberry Sauce

Summer in a bottle! I found I had an abundance of strawberries that were just at the peak of ripeness. One more day and they would have been squishy. So rather than make the family eat strawberries for every meal I decided turn them into strawberry sauce. Now we’ve been eating strawberry sauce with everything!! The directions are super-simple. Boil up some chopped strawberries, water and sugar for 5 minutes, then push through a sieve....

Slow Cooked Summer Beef Casserole

Anytime I decide to make a beef stew after the month of March you can guarantee that by the time I set it on the table the sun will be blazing outside. The birds will be singing, neighbours will be mowing their lawns, and Chris will be either looking pointedly at the barbecue, or rolling his eyeballs at me. Just like the days you actually remember to take your new sunglasses out and it rains all day....

Smashed Roast Potatoes With Garlic Bacon And Cheddar

This post is sponsored by AHDB Potatoes - a division of the Agriculture & Horticulture Development Board, committed to supporting the British potato industry Are roast potatoes mostly an English thing? I’m not sure. One thing I am sure about though, is that a perfectly cooked roast potato should be darkly golden and crunchy on the outside, and fluffy on the inside. You should almost be able to ‘crack’ them open, and that gorgeous crisp coating should come away from the potato in the middle in order to soak up the gravy from that amazing roast dinner....

8 Steak Sauces To Seriously Up Your Steak Game

It’s one of my favourite weekend dinners, and it’s make even better with the addition of one of these 8 delicious sauces (ok, one is a garlic butter, but that works fab too!). Most of these sauces can be made while your steak is resting, so your steak will be perfectly rested and ready to serve when that sauce is ready. I’ve also got a post on How to Cook Steak with lots of tips to ensure it’s cooked perfectly every time....

Baked Chicken Goujons

I LOVE the taste of a homemade Chicken Kiev, but on a busy weeknight I don’t have the time, so my shortcut to get those amazing flavours is to whip up a batch of these chicken goujons and serve them with some Chimichurri Sauce. It takes less than half the time to prepare and turns out so delicious every time! The added bonus is you can make extra chimichurri and serve it over everything for the next couple of days (on salads, drizzled on a roast beef sandwich, mixed with pasta or quinoa, even on pizza)....

Chicken Biryani

Some recipes are a case of throwing it all in a pan for an easy dinner (one pot chicken and pasta is brilliant on those busy week nights), but sometimes it’s almost meditative to take some time and put together a food creation that’s made with love and care. This biryani is one of those dishes (and yes, we do dirty a few dishes along the way…). Made of several layers, it goes into the pan like this:...

Chicken Carbonara

Carbonara scared me for years. I had a few bad results (scrambled eggs and spaghetti anyone?) until I finally got the knack for getting a lovely smooth sauce every time. Creamy Chicken And Vegetable Soup

January is soup-month like no other! I’m trying to get better at keeping up with seasonal/holiday trends this year. In the past I’ve been known to just about get a couple of recipes out, right at the last minute. That or forget entirely. Not because I hadn’t thought about it, but more because I’d either thought about it too late, or had already filled up my schedule with other stuff I wanted to make (often off-season recipes that I was craving)....

Healthier Slow Cooked Spicy Beef Curry

I’ve been making this curry for 5 years! It’s one I go back to time and time again because: Five years ago when I first published this recipe I wrote: ‘The kids have gone back to school today. Rhubarb Marshmallows

Decadent, fluffy, vanilla marshmallows, swirled with tangy rhubarb. and a very surprised Nicky. I’ve never tried making marshmallows before, and expected it to go horribly wrong. After all, those beautiful little piles of artisan Rhubarb Marshmallows that come in tiny little bags of 7 or 8 pieces cost a fortune! Surely there must be some secret, complicated skill involved? Well, I’m here to tell you that there isn’t. Amazing marshmallows are easy!...

Roasted Kabocha And Goat S Cheese Salad With Pomegranate Dressing

Kabocha Squash is a fairly new discovery for me. I’d seen it on the supermarket shelves, looking all squat and wrinkly like a mean-green goblin, and ignored it for that very reason. It just goes to show how looks can be deceiving! I bought my first one last year after the shop sold out of butternut squash, and Whoa!! Kabocha is better than butternut squash!! Like waaaayyy better! A dense and sweet flavour, with a hint of nuttiness to it - which tastes amazing roasted in the oven with a few spices and a good glug of olive oil....

Spanish Chicken And Rice

Juicy, golden-skinned chicken and spicy chorizo, served on a bed of tender basmati rice. Yes, this is some hearty comfort food! There’s a little bit of upfront work in the browning of the chicken and giving the vegetables and chorizo a quick fry - but once you’ve got that rice and stock mixed in, you can stick it in the oven and relax until dinner time. So much flavour is absorbed by that rice....

Sticky Chicken Stir Fry With Video

I was having a cupboard clear out yesterday, and I found 7 - yes that’s SEVEN - bottles of soy sauce. I’ve obviously got some kind of lack-of-Chinese-food-phobia causing me to pick up a bottle every time I do the shopping. Or maybe I should just clear out my cupboards more often…. I do seem to go through a fair amount when I’m in the mood for Asian ricey/noodley dishes like this crispy chill beef or these veggie Asian noodles....

20 Minute Butterbean Chorizo Feta Soup

Love this soup! I’ve got a bit of a thing for butterbeans lately – after making some stuffed mushrooms with a cheesy butterbean filling for Simply Stacie about a month ago. I’ve been looking for things to do with them ever since - and this has turned out to be one of my favourites. The delicately creamy butterbeans soak up the flavours from the chorizo and tomato to make it a hearty and delicious soup....

Chicken And Quinoa Salad Bowl

I don’t know about you, but lunchtime sandwiches always make me feel so lethargic. A biscuit (or three) usually follows soon after in an effort try to wake me back up again (like that’s actually gonna work!). So I’m on the hunt for energy boosting lunches! Cookie Experiment

Well it turns out the answer is yes. Quite a significant difference actually. I baked over 80 cookies for this cookie experiment - and I probably ate at least 10% of those cookies 🙂 This experiment took a fair bit of prep, and pretty much a whole day of baking. So I decided to combine it with my last week at work and get my office friends involved in this taste test as part of my goodbye....
